Welcome to the Wing Bible

Just imagine your family from out of town is coming to visit. They’ve heard that WNY is the home of the Buffalo wing, and they're supposed to be the best in the universe. But WHERE should you take them for the best Buffalo wing experience? You will be mortified if your family tells you that your favorite Buffalonian spot for wings is just “Okay” and “They ain’t as good as our ‘Unbewingable’ joint back home.” Unimaginable!!! 😱

To save you from this fate worse than death, our father-daughter team of Jay and JP set out on a quest to taste, catalog, rate and rank 30 famous (and not-so-famous) wing establishments. Using a detailed, analytic approach, we know of no other wing rating system so comprehensive. We christen it “The Buffalo Wing Bible.”

So when those family members finally arrive, you will be as cool and collected as a cucumber because you've read THE WING BIBLE and have listened to the wise ratings of THE GOODWINGS! With this sacred knowledge, you will be able to take your family for the best wings that Buffalo has to offer.

Our Quest

We ate at 30 different restaurants throughout the Buffalo, NY area. The entire wing adventure spanned approximately 5 months, 60 hours of dining, and 297 chicken wings. We collected and compiled the precious data that is now presented before you. One of the best parts of this endeavor was getting to spend so much father-daughter time together (it was well worth the acid re-flux). Amidst many claims to wing fame, we wanted to find out for ourselves which eating establishment in Buffalo is home to the BEST CLASSIC BUFFALO WING! 🍗

Note: Our ratings are not an indictment against any restaurant. Most restaurants serve a robust and fantastic menu well beyond chicken wings. Each rating is merely an expression of our opinions and tastes focused specifically on Buffalo wings. We would also like to note that if any restaurants would like a do-over, we are happy to come back and try your wings again for the small fee of one serving of 10 medium Buffalo wings.

Surprises & Conclusions

We encountered many surprises along our wing journey. Here are some of our key observations from our long and arduous journey:

1. Although Buffalo, NY is the home of the original Buffalo wing, there are not actually a great number of outstanding wings in Buffalo. Only a handful of restaurants can say they house a truly transcendent wing. Most wings in Buffalo are just okay.
2. The vast majority of wings do not have enough sauce on them. MORE SAUCE PLEASE.
3. Many restaurants are overthinking traditional Buffalo sauce. A memorable Buffalo sauce requires just 3 things: 1) acidity, 2) spiciness, and 3) creaminess. Adding garlic, pepper, sugar, or any other flavor doesn't improve this traditional Buffalo sauce recipe.
